I got my cookbook Tuesday and today is the first day I am making a meal of it. Now I am a heterosexual male so cooking isnt exactly second nature even though some of us do it quite well. But I am taking a risk and making Gwen's Fried Chicken without the milk gravy. I figure it was cheap and easy. So I got the chicken soaking in salt brine now. And this morning I made the Italian Cream Cake. It wasnt hard to make really and Trisha's directions are very easy. It was a pain to ice it but thats with any cake. I may have left it out to cool too long when I ran to target to buy a dish to store it in, hope its not too stale.... But I am pretty excited.
As for a side I am doing a Cory recipe, not a Trisha one

Red potatoes sliced and covered in olive oil, salt,pepper, and a few seasonings. Baked in the oven. Tasty!
I have been fasting all week so I can get away with all this food tonight!

Hope you enjoy that chicken!

I got my cookbook on Friday. I was hoping it would be signed, but not my luck. I guess I know what I will be hoping to have Trisha sign - when I get a M&G someday!
We actually used the cookbook Saturday, as we had the grandkids here for supper. We did greenbeans and chicken for the kids. They actually ate everything we cooked! It was fun to go through the book and decide what recipes we'll try next! I want to try them all!

We are really enjoying the cookbook. Saturday night we made Ribbon Meatloaf which was very good and both my girls ate it which shows you how good it was. They are such picky eaters. We are going to make the Chicken Pie tonight for dinner and I am really eyeing the Banana Pudding Recipe. I got my cookbook in the mail today. So now I have my autographed copy which will be put up in a safe place and we have our kitchen, cooking copy which I know will get messy.

Hi All,
I got my cookbook on Friday and have made the chicken, broccoli, and rice recipe, the brownies (twice) and snickerdoodles. All are delicious and not hard at all to make. I don't think I could eat these heavy meals every night but they sure are great for a special meal or for company. I bake for a hospice house in our area once a week and they are really enjoying the baked goods. Think I'll try the oatmeal cookies next week.

Oh my Gwen's fried chicken was AMAZING. So moist and flavorful. The Italian Cream Cake was a HUGE hit too. Pretty proud of myself since like I said I am not a cook. So it was something new and tasty

Cori I agree, Gwens Chicken was Delicious! I'm glad you had success with it! Everyone here loved it, and with 3 boys, that's not always the case! Another Big hit was the roast, but that was very similiar to how I've always made it-except for the vinegar-still not sure what that's for, but it turned out great! Also, the cheesecake--YUMMY! Tomorrow we are making the Ribbon meatloaf-I am positive that it will be a huge hit! What's not to like?
I'm also really excited to try the bbq ribs! Among other things! I love to cook, and my youngest also loves to cook, so we've had a blast trying some of these recipes...I just wish we had more time for it-in a very active household finding time to make an actual meal is not always easy!

Hey all!
I have a favor to ask!
I've looked through the cookbook and everything sounds and looks so good. My problem is that I'm a terrible cook/baker/kitchen person... What would be the simplest thing to try that is nearly 'unscrew upable'? I'm heading home to see/watch my sister's children and the last thing I need is my 10 year old niece informing her mother that I had to order pizza because I caught some thing on fire.
Any suggestions would be great!!

Hi Sarah,
The chicken, broccoli, rice casserole is fool proof but I'm not sure a ten year old is going to like the broccoli. My boys liked it when they were younger so maybe you'll luck out and your niece will like it, too. I made the snickerdoodles and they were awesome. You can't go wrong with them. Or just do the chocolate chip cookies. They're pretty easy. I'll be anxious to hear how you make out.

So are you now becoming a cook??? I already cook my fried chicken that way believe it or not. They used to have the recipe on the cornflake box years ago and I just modified it. I'll have to try your taters...... so what's your recipe Mr. Chef?
I love the chicken/rice/broccoli casserole - but not all 3 of my kids like chicken so I use Garth's recipe for broccoli/rice casserole.......

I did the german chocolate cake today, holy crap was that a task! It took me nearly 3 hours! The melting and mixing and more simmering blah blah....I tried some and its good. Not sure if I would make it my birthday cake because I am in love with the Italian Cream Cake lol. But good non the less!
So you want the Cory fry recipe

Here it goes
Slice red potatoes(the number depends on how many your feeding) into fries and add into a bowl 2-3 tbl spoons of Olive oil and stir in salt and pepper and garlic powder to taste. Not many measurements here! I stir until the potatoes are evenly covered. Then I let them soak in the fridge for a few hrs this is optional I find this makes it crispier.Spread out onto a tin foiled cookie sheet and spray with cooking spray. I add season salt LIGHTLY to them just because I love seasonings. Have some fun if you want and just add a lil of anything lol. Then cook 15 minutes on each side at 350 degrees. Enjoy!

Also... General question here. A group of us were preparing for our finals tonight and we decided to attempt a dish as a 'break.' Anyway, we picked the baked mac and cheese on 115-117. Had a slight problem.. Trisha says:
"Make the sauce while the macaroni cooks. Melt the butter in a 1-quart saucepan. Using a wire whisk, stir in the flour and 1 teaspoon of salt, stirring and cooking over medium heat, until the roux bubbles and the flour turns pale brown, about 3 minutes. Remove the pan from the heat and slowly whick in 1 cup of milk. ..."
We melted the butter and then stirred in the flour, or well attempted. When we did it that way, the flour/salt mixture just clumped into something resembling dough. And even when we poured in the milk, it didn't break up the clumps. We did, though, pour that down the garbage disposal and try again, this time adding the milk before the flour/salt mixture and it worked better. [Except for the fact that we thought it should thicken up quicker than it did and ended up putting 6 tablespoons of flour in instead of the 4.. Sauce is kinda think. lol]
But in any event, is that the proper order? If so, how come it clumped up? Help!!

I haven't tried any of the recipes yet, but judging from the posts here they all must be as delicious as they appear from the cookbook.

Sarah you can use safflower oil instread of peanut oil, just use a thermometer to keep the temperature even, as safflower oil doesn't have quite as high a smoking point that peanut oil has.
For the roux, completely melt the butter and add the flour a little at a time whist whisking continuously. Also measure the flour consisely-it sounds like you had too much flour if it clumped. The roux should be a smooth loose paste, with no visible flour; cook the roux until it goes slightly glossy before adding the milk. With experience, rouxs are a snap, but they do take patience.

Thanks bll!!! I bet that's what happened. I never have been one for 'precise' measuring. Never made or even heard the word 'rouxs' before so didn't think it really mattered.. Shall fix that the next time around. I"mnot good with patience while cooking, but am definitely willing to attempt to learn to be a patient cook.

I did, though, attempt her chocolate pound cake. It calls for a 'tube pan.' I just thought she meant a regular round pan so that's what I got. Came to find out that she actually means what I call and what I've always heard called an 'angel food cake pan.' So for those of you like me, which I'm hoping I'm not the only one, please use an angel food cake pan! lol If not, you'll be baking it for 2+ hours and then cutting off the burnt top portions... I will say, though, that the non-burnt insides taste really good.

You can use a bundt pan as well.
I have to tell you the sausage hors d'ourves are to die for; they make a huge batch and are just as good warm or cold. I had some last night for dinner and this morning for breakfast!

Cori, it's Delicious! It's very easy to make, if you follow the directions...I had my youngest do alot of it and he did great! For us, the hardest part was seperating the meatloaf each the opposite direction, but that's it! Enjoy!

I really want to get this book. I seen her on The View and the food she had brought with here looked yummy. I have to wait till the beginning of the month to get it but I'm sure going to. You all have given great reviews and I'm getting more and more excited to try it out. I too am not a good cook as i've read a couple others on here. But you can not learn to cook without trying. So what if you burn a meal or two along the way. Isn't that all part of the fun of cooking?

I made the ribbion meatloaf and the hardest part was making the biscuit dough lol. I wanted to make it myself but it turned out excellent and everything was good. Big hit. I may cut down on the peas not a big fan but non the less I loved it
Also made the blueberry muffins and they are AMAZING!

That's exactly right.. Ya can't learn unless you blow up things and burn things! You can come on and learn with me and the rest of the people.

What I will say is that her book walks you through each step... And I've been very lucky to have the experienced cooks on here explain to me what I've done wrong so I don't do it again.

Today I moved onto bigger and better things AKA Stuffed Porkchops. A bit of extra attention is needed I agree with Trisha there but I think it was easier to make than the Ribbion Meatloaf and the fried chicken and way easier than those darn cakes!
I made 3 of them but the recipe served 4 so I had nice bit of extra stuffing. I also got the pre pocketed pork chops. I made Trisha's mashed potatoes with it and some choc chip cookies. I also wipped up a batch of her blueberry muffins for breakfast this week!
Trisha should help me pay my Bally's Bill lol. I lost abouy 18 pounds this past year and I am doing a dandy job of getting it back! Eh I was looking a little scrawny anyway what the heck! So far I have made from the book

I know! I am not much of a cook but I am suprising myself with this! Her recipes are SO EASY! I was never talented in the kitchen but there are worse than me......I was dating this girl who thought it would be nice to make me some romantic Kraft Macaroni and Cheese

Well poor thing didnt know that you drain the water BEFORE adding the cheese,butter and milk. I look at this stuff and it didnt look right and couldnt place my finger on what was wrong with it. But like a gentlemen I tasted it, then like a pig I spit it right back out. That was the end of her cooking lol. We didnt last

We have made the Chicken Pie and Trisha was not kidding about it being "comfort food"! We had this heavenly smell throughout the house while it was cooking and my girls came out and wanted to know when it was time to eat. LOL! It just melts in your mouth. We had left over chicken from what we boiled for the recipe so I made Trisha's Chicken Salad recipe and had that for lunch the next day. Actually my husband and I fought over it and ended up sharing it! LOL! We bought some ribs and a roast to make two other recipes but will not get to do that until next weekend. We have a wedding in our family this weekend. It feels like it has been going on for a while now as every weekend there has been some event for it. Have a great weekend everyone! I love reading about all the different recipes everyone has tried.

Has anyone tried to make the fudge yet? I just tried to make it, and I think something is wrong. It's been cooling for over an hour, and it hasn't solidified yet. It's still liquid.

I followed the recipe. I have never made fudge before though. Is it possible it will just stay a liquid?
I am going to make the broccoli chicken casserole tonight. I hope it turns out better than the fudge did.

I keep wanting to try the zucchinni but havent found the right meal to make it with. Sadly the fried chicken has become a weekly thing, as will open heart surgery in my future if this keeps up lol. But its a family favorite! I tried deep frying them last night, and they came out picture perfect! Tonight is Ribbion Meatloaf round 2. It was good and deserves a second chance.
