I just got Trisha's new cookbook in the mail. The recipes look awesome I can't wait to try some of them.

I don't know which I like better, I guess I don't have to choose, just pretend they are one. Thanks again Trisha! I have made the Key Lime Cake, Stuffed Peppers and the Crunchy Slaw, loved them all. Next comes the Red Velvet Cake, Crock Pot Mac and Cheese and the Grape Chicken Salad!

I love Trish's cookbooks, but one recipe I had made from her newest cookbook, didn't wow my husband and I, and that recipe was...hot corn dip. The recipe calls for grated monterey-jack cheese, but I think another cheese should be substituted to give the dip more of a kick. Perhaps a hot pepper-jack cheese would be a good substitute. Other than that, I look forward to preparing many of her other delicious looking recipes.

Okay, I watched Trisha on The View... the ladies LOVED her cookbook and everything she made. They raved about her Hot Corn Dip so I decided to buy the book.
One problem with the recipe... what the hell is Mexican canned corn? I'm canadian and I have searched everywhere for it and have no idea what it is or how to get it.
I have the dip in the oven right now and I have substituted regular canned kernal corn.
I sure hope it works. I also used jalepeno-montery jack cheese.
Fingers crossed!
